Ingredients:
- 500 grams fish (preferably firm fish like kingfish or tilapia)
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, finely chopped
- 2-3 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to your spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/4 teaspoon fenugreek seeds (methi seeds)
- 2-3 tablespoons Maharashtrian fish masala (you can find this at Indian grocery stores or make your own)
- 1 cup coconut milk (or 1/2 cup grated coconut)
- 2 tablespoons vegetable oil
- Fresh coriander leaves for garnishing
- Salt to taste
- Water as needed
Instructions:
1. Clean the fish and cut it into medium-sized pieces. Marinate the fish pieces with a little salt and turmeric powder and set them aside for about 15 minutes.
2. If you are using grated coconut, grind it into a fine paste using some water. Alternatively, you can use store-bought coconut milk.
3. In a large, deep pan or kadhai, heat the vegetable oil over medium heat. Add the cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
4. Add the finely chopped onions to the pan and sautรฉ them until they turn golden brown.
5. Add the ginger-garlic paste and green chilies to the pan. Cook for a couple of minutes until the raw smell disappears.
6. Now, add the chopped tomatoes and cook until they become soft and the oil starts to separate.
7. Reduce the heat and add the turmeric powder, red chili powder, and the Maharashtrian fish masala. Mix everything well and cook for a minute or two to release the flavors.
8. Pour in the coconut milk (or the grated coconut paste) and mix it well with the spices. Add some water to adjust the consistency of the curry according to your preference.
9. Bring the curry to a gentle boil and carefully add the marinated fish pieces. Be gentle while stirring to avoid breaking the fish.
10. Cover the pan and let the fish cook in the curry for about 8-10 minutes on medium-low heat or until the fish is fully cooked and tender.
11. Check for salt and adjust if necessary. If you like it spicier, you can add some red chili powder or green chilies at this stage.
12. Once the fish is cooked, turn off the heat. Garnish the fish curry with fresh coriander leaves.
Your Maharashtrian-style fish curry is now ready to be served! It goes wonderfully with steamed rice or Indian bread like chapati or bhakri. Enjoy your delicious fish curry!
